Background Subtraction

Hi people,

Can anyone here explain how to do background subtraction?
I understand that it is roughly: foreground=image-background

However, how to I use the mean and variance of the pixels to do this computation?

Any help is gradly appreciated.
 
Look up chroma and luma keying, as in terms used in video processing and television/broadcast/compositing etc.
