Bridge rectifier - ok to substitute model with higher reverse voltage capacities?

Yes, you can use the higher one - in fact I only ever stock the highest ones.

They do lower voltage ones because it's cheaper - for manufacturing that's important.

With Schottky diodes, a higher reverse voltage will also mean a higher forward voltage. So you get better efficiency to choose the lowest voltage that you can reliably get away with.

I'm not sure if this is also true with silicon devices or not. All of the standard rectifier datasheets I have looked at for this parameter, only show a maximum Vf for the whole family. Not typical curves for each member of the family.

Do you even get Schottky bridge rectifiers?.
