YOur question is very heavy handed and broad and you could easily spend your entire life studying it.

It's much harder than pinning out a relay with an ohmmeter. There are plenty of Google hits for motor theory. **broken link removed**

As Hero999 stated, Wikipedia is great for this. Find a list of the different types of motors, and then go into the Wiki page for each.
