Do you think the attached means of clamping iout is feasible in real-life....or is it just a sim-dream?
(ie putting an external error amp to the ITH pin)

The diff amp U3 I would be inclined to use a Instrumentation Amplifier (IA)
because of the need to have trimmed resistor ratios to get high common mode
rejection.
I did not look into the effective loop gain but that circuit has better overall headrrom
operation and ability to transfer into solid constant current mode than the classical
simple approach below. User choice. Below suffers from compliance problems (headroom
needed), and operation that fails at low voltages. It does have good transient speed
however. Does not lend itself to adjustable limit control however.
