I have a small TFT screen which uses 12V 300mA. I will attach to it an adapter 12V 800mA.

Will the adapter fry the TFT screen?

No, it will not fry, the TFT will draw only 300mA from a possible 800mA output.
 
does your adapter is regulated type (switching type)? if not then it could fry the lcd because volatge will be a lot higher at only 300ma load
 
to be sure plug your adapter without any load and mesure output voltage.

He should really load the output with a 40R resistor, say 39R at 5W when doing that test.
or at least 220R.
