You can buy little capacitive water sensors now that just glue on the outside wall of the tank, they use some piezo system to know when the inside wall in in contact with water. It's a good solution, no moving parts, no contact with the water and almost no installation effort.
You could even glue a few on the tank and have a few LEDs to show the water level like a bargraph.
