well you didn't say anything about type of application or your preference...
you can try to build an oscilloscope, balloon machine, mp3 player, vending macine, segway...

he he, I sure know what I would build: an audio amp of course
you can go as deep as you want in this subject

I agree with panic mode that you at least need a direction, maybe lets start with digital versus analogue?
