Hi All:
I am trying to design an amplifier for a PH probe, but I want to split a 5V supply to make the virtual ground.

Are their any opamps (hi impedance, lo noise) similar or better than the TL072/82 types which can run on +/- 2.5V and get close to rail to rail outputs?

The AD822 looks good but it's a bit pricey.
The TLC2272ACP is not bad at all @ a 1pA input current and characterized @ 5VDC rail to rail ops useful for ADC inputs.

Any other options/suggestions?

The ca3260 was intended for such purposes, I just checked on google and intersil say its now obsolete, its still available though, its a dual version of the veriatble long running ca3130.
