If you remove the electronics and the stop from a servo motor it will become a geared motor, just like any other geared motor. It will spin slowly with lots of torque.

That is not a proper conversion. That is just wrecking your servo and reusing the motor and gears.
Here is how you do a proper conversion:
1) Remove the mechanical stop
2) Remove physical connection between the pot and the output gear
3) Fix the internal pot at center position
